Beautiful Fruit Pizzas for Vegan Pizza Day!

Saturday June 29th is Vegan Pizza Day! Let's fruitify it!
Make a superhealthy vegan fruit pizza for fact, make two so you can have an extra one to munch on throughout the day, or share it with your favorite neighbor.
Sendik's Food Market has a wagonload of fruit on sale this week including peaches, pluots, strawberries, blueberries, grapes and cherries...all fabulous pizza toppings. Like a palette of paint in a pizza maker's hand.  :)

A Whole Lotta Lentil Love

I never met a legume I didn't like. I'm a hardcore bean fiend, peanut butter nut and garbanzo aficionado. If I was trapped on a deserted island with a boatload of chickpeas, I'd build a hut and call it paradise. ;)
Right behind chickpeas, lentils are #2 on my Legume Love List. Deliciously thick veggie-chunk-filled lentil soup revives me on the deepest darkest winter's day, and lentil burgers send me over the moon anytime.
And since organic red lentils are on sale at Outpost Natural Foods and Saturday June 29th is Vegan Pizza Day, you can bet I'm gonna give one of Richa's crazyamazing pizzas a try!  :)

Beautifully Hued Bells

Did you know that bell peppers come in almost every color? Red, yellow and green are the most common, but you can also look for orange, "chocolate" purple-brown, purple, white...a whole rainbow!
I recently bought a boatload of reds, oranges and yellows and I love them! They're supersweet, power-packed with vitamin C, and a cup of raw chopped peppers only has about 30 calories. Now I just need some colorful pepper inspiration...
